Nothing wrong with Alvio. The ones I used lasted just as long as Deore or SLX ones I have owned

The cassette will come with a lock ring, it's part of the cassette.

A 25 tooth should be perfectly fine, I'd be pretty surprised if you would need anything bigger.

I miss my 92 Bear Valley!!! 😧

The Bear Valley and the Bear Valley SE in particular were very highly rated bikes at the time, with the SE being a very good competition bike in those days.

Paint, most definitely. Fantastic range of products available to allow you to do an excellent job and so easy to correct little mistakes.
