What is the difference between the 300 / 500 / 700 versions? (Other than price obviously!)

Am guessing it's a quality thing but wondering if the padding is different....

I used to run Nukeproof Electrons and really rated them.

Very light as made of a nylon composite material but never had any concerns over strength / lastability.

Cheaper than the v12 Mags too... ...

Easiest option could be to swap for a closer ratio cassette - which of the 11-32 range do you use least or most and which of the 50/34 rings do you use the less?

Perhaps the 'default' sportive cass ...

Had exactly the same thing when I switched from the mountain bike - a few rides and you'll soon start to find the wobbling reduces as you get used to it.

Not sure how you tell if the stem is too lo ...
