Fat-free 'sustain' bar recommendations please

I've just about run out of my cheap (from eBay) short dated Protopure bars (though they have too much fat content) and so need something else for long rides. I've read recently that it's best to avoid any fat intake during exercise as it inhibit the take up of carbs and is not easily digestible and that the jury is out as to whether we need protein during this type of activity so.....

1. Does anyone make a reasonably high GI/calorie 'bar' themselves? Can I have the recipe but it does need to be fat free.
2. Can anyone recommend something that's available (again fat free) and I am not that keen on gels due to the cost and the fact they are horrible.

Recently got introduced to 9 Bar which are great fast and consistency wise but at 50% far they aren't any good to me.

I do know some of you guys make your own flapjacks. I'm increasingly doing 5, 6 or even 8 hour rides so I need some proper sustenance and whilst bananas are really great they are too bulky for the amount of carbs/calories.
