I currently have the following specification rims on my Camber:

Custom DT Swiss 445D, disc, double wall, pin joint, eyelets, 24mm, 28/32h

They're fitted with 26x2.0 tyres, but I'd like to increase the tyre size to 2.25 - Does anyone know whether or not the tyres will fit?

All Camber models are fitted with 2.0 tyres.

Yes mate will easily fit, prob could go up to 2.4 and more but they'd be a major drag

probz about 2.5, but would they fit the frame. Anything from 2.2 to 2.35 seems to be the optimum for trail riding.

Went with a set of 2.25 tyres.

Can I use a tube rated 2.0-2.2 with a 2.25 tyre?

I'm almost certain it will fit with my frame, but wasn't sure about the rim.

you'll be perfectly fine with that tube. Tubes can expand loads. You'll be fine. When I get tubes I tend to get something like the schwalbe ones which fit tyres from 1.5-2.5 as they fit my slicks and my mtb tyres.
